Kovaikaai ( ivy gourd ) Gravy or kuzambu:
I will post here, my new preparation , i am clearly to say all these are collected from various chef net collections. I tried. The recipe which has come out very well , has been posted by me.

Ingredients
Kovakkai( ivy gourd ) - 1/4 kilo
Onion - 2
Ginger garlic paste - 3 tsp
Garam masala powder - 1 tsp
Turmeric powder - a pinch
Chilli powder - 3 tsp
Red chilli - 4
Cumin - 2 tsp
Khuskhus ( poppy seeds ) - 1/4 cup
Coconut ( grated ) - 1 cup
Curd - 1/2 cup
Coriander leaves - a few
Salt - to taste
Oil - as needed
Method
1. Cut onion, kovakkai, into lengthwise pieces.
2. Dry fry coconut, khuskkhus, cumin, red chilli, till coconut changes colour, grind to a paste when cool.
3. Heat oil in a fryrig pan.
4. Add kovakkai, fry and set aside.
5. Heat oil in a pan.
6. Add onion, fry for a few minutes.
7. Add ground paste, chilli powder, turmeric powder, ginger garlic paste, stir till raw smell subsides.
8. Add kovakkai, salt, garam masala powder, 1/4 cup of water and cook.
9. When contents have boiled well, add curd, coriander leaves, mix well , switch off stove.
